Steamed One Pot Diamonds

Ingredients

  • 1kg Clams (we used Cloudy Bay Clams Diamond shell)
  • Half a red onion
  • 2-3 cloves of garlic
  • 1 chilli
  • 1tsp ginger
  • Bread (we used fresh French bread)
  • Spring onion
  • Parsley

Directions

  1. Dice red onion, chilli, garlic cloves, and ginger finely
  2. In the pot add a knob of butter, garlic, chilli and ginger. Fry off until the butter starts to brown.
  3. Add glug of yesterdays sauv or chard or any white to deglaze and cook off the alcohol.
  4. Add Diamond shell clams and approx 1 cup of water to help steaming clams open.
  5. Bring to boil (by now shells should be open).
  6. Stir through a handful of fresh greens.
  7. Add seasoning to taste and serve.
